Well since my daughter MacKenzie was diagnosed with diabetes this last Christmas I have been on the search for a low carb breakfast that didn't have me slaving in the kitchen all morning. EUREKA!
Welcome to the 6g carb muffin! It is made mostly of almond flour and has no refined sugar and has about 5g of protein! "have two, or three . . . . . go ahead" Wow, most muffins I have come across that are gluten free run around 20 - 30g of carbs per muffin. So you can understand my excitement. So without further adieu, her is the long sought after breakfast miracle.

ALMOND MUFFINS #9
pre-heat oven to 350*
3 large eggs
1 Tablespoon of water
1 Tablespoon vanilla extract
2 Tablespoons honey
1 1/2 cups blanched almond flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon guar gum
Mix it all together and pour into greased or lined muffin tin. Bake for 10 -12 minutes. Makes about 10. They aren't high risers but still end up nice and fluffy. These go fast so you may want to double the recipe if you have more than one person in the house. I think I have eaten at least 3 of these since they were baked only 30 minutes ago, and yes the first one burned my mouth!
since putting on this picture I have eaten a total of 6 muffins, so I better go make some more!
