Lemon Dream Pie


This is seriously GOOD, so good I couldn't stop myself from eating the whole pie if it was in front of me and I would get $1000.00 if I didn't eat it.  This would be a great summer dessert as well as a winter pick me up dessert to brighten you day. I bring you the "LEMON PIE" it kinda tastes like lemon meringue pie (without all the sugar.)  Again, there is no refined sugar and this is seriously low in carbs.  I am talking only 10g of carbs per slice if you cut it into 10 pieces, and about 6g of protein per slice!  I LOVE ALMOND FLOUR, can you tell?

LEMON DREAM PIE

Crust
1 1/2 cups almond flour
1/2 teaspoon salt
1 Tablespoon grapeseed oil
1 Tablespoon honey
1 Tablespoon vanilla extract

Filling
2 Tablespoon grapseed oil
1/4 cup honey
3 large eggs
1/2 cup fresh lemon juice
1 Tablespoon lemon zest


Preheat oven to 350* and grease a pie pan then set aside.  Combine the crust ingredients, they should form a nice cookie texture.  Press the crust into the pie pan and bake for 17 minuets or until it is slightly brown.  Next combine the topping ingredients and blend on high until smooth and frothy.  When the crust is done take it out of the oven and pour the lemon filling into it and bake for 15-20 minuets.  Keep an eye on it, when the sides are brown it is done.  Refrigerate for at least 2 hours.


As you can see my crust got a little dark. It turned out great for the first try!
