GF Bread-Machine Batman Bread


What do you mean by "Batman Bread" you ask?  Well my good friend April who gave me the recipe has dubbed this "Batman Bread" so Batman Bread it will be. 

It is super duper easy to make (because of the bread machine) and it is worth making. I have shied away from making gluten-free bread because of my many bread disasters in the past.  I was at my friends house one day and she made this bread in front of me, and the simplicity of the process had me hooked.

Oh yeah and to back track April made me a loaf of this bread a while ago and I scarfed it down in one night. My family didn't even know it existed the next day.  So my need for this bread was great.  I didn't want her to be my bread slave, so here we go, making bread at my house.

Don't be scared of the process, I am going to painfully recorded every step in pictures for you.
 First you start out with a bread machine, I haven't tried this recipe without it, and I ain't going to.
 Step one, take out your bread pan......simple enough!
 Step two, measure out your 1 cup of milk and 3 tablespoons of coconut oil, heat it up in the microwave or in a pyrex over a burner.  The key to activating the yeast is to have a warm start for the bread dough.
Step three, pour your warmed milk and oil into the bread pan.
 Step four, add two eggs.
 Step five, add 1 teaspoon apple cider vinegar.
 Step six, mix together all your dry ingredients in a separate bowl, then pour the flour mixture over the wet ingredients in the bread pan.
 Step seven, Make a little well in the middle of the dry mixture and add one tablespoon active dry yeast.
 Now you are going to pop that bread pan into the machine and turn it on.
 The beauty of an organized mess!

I set my bread machine on whole wheat loaf, medium crust.  I don't have too many options with this machine. If you have more options have only one kneading cycle and one long rising cycle. 
Holy gluten-free baking soda Batman, you did it!  You made edible gluten-free bread.

GF BATMAN BREAD RECIPE

Mix the following wet ingredients warm (warm helps activate the yeast) and put in bottom of bread pan:
1 cup warm milk (rice or coconut)
2 large eggs
3 Tablespoons coconut oil
1 teaspoon vinegar ( I use apple cider)

Mix the following dry ingredients and place gently on top of wet mixture in bread pan:

2 Tablespoons granulated sugar (do not substitute with stevia since the sugar helps activate the yeast)
2 cups Flour Blend (see below)
1/4 cup almond meal
2 teaspoons xanthan gum
1 teaspoon salt
1/4 teaspoon potato flour (NOT POTATO STARCH!)

Make a little hole in the top of the dry mixture and place 2 teaspoons active dry yeast in it.

April's  personal bread machine setting for this recipe are as follows:

preheat : 10 min
knead: 20 min
rise 1: 19 min
rise 2 18 min
bake:  50 min

Flour Blend
1 1/2 cups sorghum flour
1 1/2 cups potato starch
1 cup tapioca flour
1/2 cup almond meal

Cut into 16 pieces and they are ~20g each.  Total carb count: ~300g
