Wheat Free Waffles

Ahhhh, it is so nice to wake up in the morning and have some sort of idea what you are going to feed your kids.  This is my go to recipe.  When we have guests over this is what I serve!  SOOOOO easy and SOOOOO low in carbs.  I was researching waffle recipes and everything I came across was super duper carbyThis waffle comes out to only 12g of carbs so my type 1 diabetic daughter can have two or even THREE if she wants.  I top it with  Strawberry Sauce and she is good to go.

Ingredients:
*1/4 cup tapioca flour
*1/4 cup coconut flour
*2 teaspoons baking soda
*1 teaspoon baking powder
*1/2 teaspoon guar gum
*1 teaspoon cinnamon
*(3 Tablespoons unsweetend cocoa powder if you want chocolate waffles)
sift the dry ingredients together and set aside.
*1 cup almond butter
*3 eggs
*3 Tablespoons coconut oil liquified
*1/4 cup applesauce
*3 Tablespoons honey
*1/2 cup almond milk (or milk of choice)
Blend all the wet ingredients together until incorporated. Add the dry ingredient mixture a bit at a time to the mixer.  Don't over mix.


 Drop the batter into your waffle iron by the 1/4 cup full.  I can get about 12 waffles out of this recipe!
Freeze your extra waffles then you can heat one up in the toaster when you need it.
