Black Bean Brownies

Yes you read it right "Black Bean Brownies" what you have got here is a lot of fiber, a low sugar low glycemic chocolaty dessert/snack.  And in my test kitchen when the kids beg for more you know you have a winner!  If you cut the brownies into 14 pieces they are only about 8 carbs, with no refined sugar! Thank you to Nancy Martin for the recipe that I used to spin this off diabetic style.


Ingredients: 
*1 cup black beans (from a can)
*1 tesp vanilla
*1/2 cup butter or butter substitute
*1/2 cup carob powder (chocolate)
* pinch of salt
*2 eggs
*1/4 tesp powdered stevia
*1/4 cup honey

Instructions
Pre-heat oven to *350. Add all ingredients to a mixing bowl and power mix it for a few minutes.  Pour batter into greased 9x9 pan,( I have a brownie pan.)  Bake for about 25-30 minutes until the sides look a little toasted and a toothpick inserted in the middle comes out clean.  Let them cool then cut into 14 pieces.  They will be soft unto refrigerated, and they are delicate, easy crumble so handle with care.
