Almond & Carob Cookies


This is the recipe that started it all.  I got hooked on almond flour.  Not only is almond flour packed full of vitamins it is low it carbhohydrates.  My type 1 diabetic daughter loves these cookies and she can have lots of them because they are only 9 carbs each. Let's take a look at almond flour for a second.
This is based on a one cup measurment

Ingredients:
3 cups almond flour
1/2 teaspoon salt
1/2 teaspoon baking soda
2 Tablespoons chocolate chips (I use carob chips)
2 Tablespoons grapeseed oil
1/2 cup honey
2 teaspoons vanilla extract
1/2 teaspoon guar gum or xanthan gum

Pre-heat the oven to 350* and start mixing all the ingredients.  The dough should form a moist, but not sticky ball.  Form the dough into 20 balls and pat flat with your hand.  Bake the cookies for 7-10 minutes or until the sides are slightly browned.  Each cookie is only about 9g of carbs. 
I use baking stones, they seem to bake evenly.

And the final product is beautiful.
You can even add a little carob powder to this recipe to make a nice mochaccino tasting cookie!
