Grain-Free Granola


WOW, this one is a keeper.  You have to try it. This recipe is easy, fast, and low in carbs.  My friend April brought this recipe to my attention.  It all started on this site  Paleo Diet Lifestyle.

You can make the chocolate version from the web site referenced above but I (not liking chocolate) had to change the recipe to make a nutmeg spice granola mix.  My non-chocolate granola has a taste similar to that Go Lean Crunch Cereal!!! 



 GRANOLA NUTMEG CRUNCH

2 cups lightly ground almonds
1/2 cup coconut flakes
2 tablespoons finely chopped dried cranberries
1/2 teaspoon nutmeg
1/2 teaspoon vanilla bean powder
pinch of salt

1/4 cup honey
2 tablespoons Earth Balance soy-free spread
 
Mix all the dry ingredients together.

Melt the honey and Earth Balance (butter) in a sauce pan until combine.  

Pour the honey mixture over the dry mixture and stir until everything is fully coated.

Spread the granola mixture thinly onto a baking pan.  Bake for about two hours in a 200* oven.  I used a baking stone and this seemed to keep the bottom from being burned. You will know the granola is done when it becomes kind of hard. This recipe has a crunch to it.  Break it up into smaller bits and store in an air tight container.  

We use this granola in trail mix recipes, on top of yogurt, a topping for muffins (don't bake the granola for muffin topping) What are you going to use it for?

Total carbs 93g Not too bad, not too bad at all.  It is just the honey and a small bit of the almonds making up the carbs here.
