Pancakes on the Road

While on our road trip I wanted to make some home cooked meals.  Breakfast can be pretty easy when you have a made ahead mix. 

Make ahead pancake mix.  Perfect for camping, quick breakfasts at home, or lazy dinner days. 



Mix together the dry ingredients
1 ¾ cups brown rice flour
¼ cup flax flour
¼ cup almond flour
¼ cup tapioca starch
1 ½ tsp baking powder
¾ tsp salt
1 tsp xanthan gum
¼ tsp cinnamon (optional)
¼ tsp nutmeg (optional)


 Add these wet ingredients when you are ready to make pancakes

1 ½ cups rice milk
½ cup water
2 eggs
¼ cup grapeseed oil
1 tablespoon honey
1 tsp vanilla
This recipe is so much like a wheat pancake recipe.  Simply prepare these pancakes like any other recipe, heat the griddle, pour ¼ cup of the batter, flip once, and serve!   The best part about this recipe is ……… no one knows it is gluten free,  I served this up on our road trip, and everyone ate, everyone was happy……..but I still had to do the dishes.

I can make about 17 3inch pancakes so that is 17g of carbs each

A plastic pitcher works very well when when you are cooking on the road.  The pour spout makes it so easy to get the batter on the griddle. 
When you are limited on storage space, every thing you pack has to have multiple uses.  This pitcher can hold drinks, mix up batter, and be a fun bath toy!
