Make ahead pancake mix. Perfect for camping, quick breakfasts at home, or lazy dinner days.
Mix together the dry ingredients
1 ¾ cups brown rice flour¼ cup flax flour
¼ cup almond flour
¼ cup tapioca starch
1 ½ tsp baking powder
¾ tsp salt
1 tsp xanthan gum
¼ tsp cinnamon (optional)
¼ tsp nutmeg (optional)
1 ½ cups rice milk
½ cup water
2 eggs
¼ cup grapeseed oil
1 tablespoon honey
1 tsp vanilla
This recipe is so much like a wheat pancake recipe. Simply prepare these pancakes like any other recipe, heat the griddle, pour ¼ cup of the batter, flip once, and serve! The best part about this recipe is ……… no one knows it is gluten free, I served this up on our road trip, and everyone ate, everyone was happy……..but I still had to do the dishes. 294g total carbs
