This easy ice cream recipe is LOW LOW LOW carbs. First get out your ice-cube trays. Mix together some unflavored coconut milk, and vanilla cream liquid stevia. Only use a tiny bit of stevia, a little bit goes a long way!

Pour the flavored milk into the ice-cube trays and place them in the freezer until completely frozen.
Pop out your frozen milk and Vita-mix the cubes into a creamy ice cream.
SUPER low in carbs, Super good to eat.
Each scoop is only 4g of carbohydrates! You gotta love an ice cream that my type 1 diabetic daughter can have for FREE, no insulin needed!

I also experimented with some other flavors. Watermelon ice-cream was super easy to make. A few frozen cubes of flavored coconut milk, and about a cup of frozen watermelon chunks. Still pretty low in carbs, about 8g per scoop.
Keep going with this and try adding frozen blueberries, strawberries, or pineapple. The frozen coconut milk gives it the cream, and the fruit gives it the taste.
