Gluten-Free POP TARTS

This has been an instant success, it all began with a post my sister-in-law did on her blog.  To see it CLICK HERE.  She did a great job, and my mouth started to water.  My two youngest kids have never experienced Pop Tarts, so here they are. 
The steps are fairly simple, you will need to start with some pie crust.  You can use the pie crust I have here by Gluten Free Mama CLICK HERE! to visit my post on that. 
1. roll out your pastry dough between two sheets of waxed or parchment paper. 
2. add 1 tablespoon of your jelly (I used organic strawberry) spaced out 2 inches on the dough. 
3. Add your top layer of rolled out dough and section off your individual pop tart shapes.  Cut your sections apart and place them on some parchment paper on a cookie sheet (use a spatula to move these tender morsels.)


 Now you simply crimp the edges around each pop tart with a fork.  Make sure you seal all the way around so the jelly doesn't bake out. 
And there you go, sweet strawberry goodness.  These work out to about 30g of carbs each with the jelly inside.  My type 1 diabetic daughter LOVES THESE THINGS, she gets all this for one unit of insulin......
