Dairy Free Mac&Cheese

Yes dairy free cheese, is it possible?  well it isn't cheese, it is made with  nutritional yeast!  A while back a friend of mine made some mac&cheese that was dairy and gluten free, I about ate the whole casserole dish myself!  So I decided it was time to make some of my own.  I have modified her recipe taking out the soy ingredients.
It tastes like CHEESE!
Cheese Sauce
1/2 cup nutritional yeast
1/4 cup garbonzo or almond flour
2 Tablespoons potato starch (tapioca flour would do)
1 teaspoon salt
1/2 teaspoon garlic powder
1 1/2 cups water
1 teaspoon yellow mustard
2 Tablespoons olive oil

Mix all ingredients together in a good size pot and cook on medium heat.  Stir often until boiling.  Let the mixture boil and thicken (it happens pretty fast.)  Take the sauce off heat and you are all done.  You can make this into a great nacho sauce by adding a little chili seasoning.  This sauce is about 56g of carbs total. 

To make Mac & Cheese
Add cheese sauce to a cooked noodle of your choice and serve!  When using rice noodles you should eat right away.
